Healthy Vegetable Soup Recipe in Marathi

Ingredients

• 2 tablespoons olive oil
• 1 medium onion, chopped
• 2 cloves garlic, minced
• 2 carrots, peeled and diced
• 2 celery stalks, diced
• 2 potatoes, peeled and diced
• 1 zucchini, diced
• 2 teaspoons ground cumin
• 1 teaspoon ground coriander
• 1 teaspoon garam masala
• 1 teaspoon curry powder
• 1 teaspoon turmeric
• 1 teaspoon ground ginger
• 1 teaspoon ground black pepper
• 1 teaspoon sea salt
• 4 cups vegetable broth
• 2 cups water
• 2 tablespoons tomato paste
• 2 cups cooked chickpeas
• 2 cups cooked brown rice
• 2 tablespoons freshly squeezed lemon juice
• 2 tablespoons chopped fresh cilantro
• 1/4 cup chopped fresh mint leaves

Instructions

1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic and sauté until the onion is softened, about 5 minutes. 2. Add the carrots, celery, potatoes, and zucchini to the pot and stir to combine. Sauté for 5 minutes. 3. Add the cumin, coriander, garam masala, curry powder, turmeric, ginger, pepper, and salt and stir to combine. 4. Add the vegetable broth, water, and tomato paste to the pot and bring to a boil. Reduce heat to low and simmer for 15 minutes. 5. Add the chickpeas and cooked rice to the soup and simmer for 5 minutes. 6. Remove from heat and stir in the lemon juice, cilantro, and mint. 7. Serve hot.
